Ingredients 4 Portobello Mushrooms 4oz Cherry Tomatoes halved 1 Red Pepper, thinly sliced 1 Red Onion, thinly sliced 1 tbsp Balsamic Vinegar 1 tsp Olive Oil 4oz Irish Aged Cheddar Salt & Pepper Fresh Basil leaves to serve Method 1.Remove the stalks from the mushrooms and lay gill side up on a baking tray. 2.Drizzle with a little oil and place under a preheated grill for 4 minutes on each side. 3.Heat a pan and add some oil, add the cherry tomatoes, red onion, red pepper and balsamic vinegar and cook for 3-4 minutes until softened. 4.Add a spoonful of mixture onto each mushroom. 5.Top with some grated cheese and return to the grill for 3-4 minutes until browned and bubbling.
