Sausage Plait

Ingredients:

Pastry
225g/8oz Odlums Cream Plain Flour
Pinch of Salt
125g/4oz Margarine
Cold Water

Filling
225g/8oz Sausage Meat
4 Scallions (chopped)
1 Cooking Apple (peeled, cored & grated)
4-6 Sage Leaves (finely chopped)

Method:

1.Preheat oven to 200°C/400°C/Gas 6. Lightly grease a flat baking tray.
2.Put the flour and salt into a mixing bowl. Coarsely rub in the margarine. Add sufficient water to mix to a soft dough with a knife.
3.Lightly roll on a floured surface, then cover in cling film and leave in the fridge while making the filling.
4.Make the filling by putting the sausage meat, scallions, apple and sage into a bowl. Mix well to combine all the ingredients together.
5.Take the pastry and roll on a floured surface into an oblong shape about 12” x 6”.
6.Roll the sausage meat on flour into a roll the length of the pastry. Place in the centre of the pastry and press out to about 2” in width.
7.Make ‘slit’ with a knife along each side of the pastry and bring over the sausage meat like a plait, alternating from one side to the other !
8.Bake in the centre of the oven for about 50 minutes until nicely browned.
9.Serve hot with baked beans!!!
