Crispy Potato Cakes
A fresh and crispy potato change with your main meal!
Ingredients
- 2 tablespoons butter (plus more if needed)
- 2 cups cold mashed potatoes
- 1 egg
- 1–4 tablespoons flour (adjust based on potato consistency)
- Salt, to taste
- Pepper, to taste
Optional Add-ins:
- Chopped chives
- Cheese (small chunks preferred over grated)
- Sautéed onions
- Roasted garlic
- Sliced green onions
- Leftover corned beef
- Cooked bacon
- Sea salt
Method
- Preheat a large skillet over medium heat and melt butter.
- In a bowl, mix mashed potatoes, egg, and enough flour to form a thick batter that holds its shape when mounded. Add salt and pepper to taste.
- Gently fold in any desired optional add-ins.
- Shape a quarter of the mixture into a round patty, similar to a burger patty.
- Place the patty in the hot pan and slowly brown in the butter, flipping once.
- Cook until both sides are golden brown and crispy, with a creamy center. Serve immediately.
