Garlic Cheesy Bread

Method:

1 large loaf of day-old bread such as Vienna or sourdough

100g butter

2 cloves of garlic, finely chopped or grated

Small bunch fresh flat leaf parsley, roughly chopped

250g Dubliner vintage cheese, grated

Ingredients:

  • Pre-heat oven to 180°C / 160°C fan assisted / gas 4.
  • 2. Using a bread knife, cut the bread diagonally into diamond shaped pieces to about ¾ of the way down. Be careful not to cut the loaf all the way through to the bottom. Place loaf on a large piece of tinfoil (or two overlapping pieces) on a baking tray. Set aside.
  • 3. Place butter and garlic in a heat proof bowl and microwave in short 10 second bursts until butter is melted. Alternatively, melt over medium heat in a small saucepan. Stir in chopped parsley.
  • 4. Spoon melted garlic butter in between the sliced cracks, then stuff with grated cheese. Loosely wrap foil around the loaf. Seal closed and bake in pre-heated oven for 20-30 minutes, or until cheese has melted.
  • 5. Remove from the oven and serve immediately.
