Caramelized Onion, Apple and Prosciutto Pizza with Dubliner Cheese
Onions and apples softened in Irish butter are a pizza-lover’s delight. They pair to create a unique topping that’s sharp, sweet and perfectly suited to pizza. Add some well-cured prosciutto and top with Kerrygold Blarney Castle and Dubliner Cheeses, and you’ve got a gourmet pizza fit for any occasion.
Ingredients:
3 tablespoons Kerrygold Pure Irish Butter
1 very large onion, peeled, halved and thinly sliced
2 medium apples, peeled, cored and thinly sliced
1 pound prepared pizza dough
1 (7-oz.) package Kerrygold Blarney Castle Cheese, shredded
1/2 cup thinly sliced prosciutto
1/4 cup shredded Kerrygold Dubliner Cheese
1 tablespoon chopped fresh thyme
Method:
1. In a large skillet, melt Kerrygold Pure Irish Butter over medium heat. Add onion and cook, stirring frequently, for 10 minutes.
2. Add apples to skillet; cook and stir for 10 minutes more or until onions and apples are very soft; set aside.
3. Preheat oven to 450° F and line 2 large baking sheets with parchment paper. Divide dough into 3 equal pieces.
4. Roll each into a 9-inch circle or a 10 x 8-inch rectangle on a lightly floured board.
5. Transfer to prepared baking sheets and sprinkle with Kerrygold Blarney Castle Cheese.
6. Place equal amounts of onion mixture, prosciutto and Kerrygold Dubliner Cheese on each pizza.
7. Bake for 12 to 15 minutes or until cheese is lightly browned on the edges. Sprinkle with fresh thyme.
Makes 6 main dishes or 12 appetizer servings.
