Bacon, Cheese & Tomato Scramble
A special breakfast treat.
Ingredients
2-3 Rashers, diced
6 cherry tomatoes
4 eggs
2 tablesp. milk
2 tablesp. grated cheddar cheese
2 tablesp. chives, chopped
Salt and black pepper
To Cook
Sauté the rashers in a non-stick pan until fully cooked.
Add the tomatoes and cook for 1-2 minutes.
Beat the eggs with the milk, cheese, chives and seasoning.
Add the mixture to the cooked bacon and continue cooking over a gentle heat until just scrambled.
Serve on toasted buttered soda bread or farls.
