
Lakeshore Pork
Ingredients:
- 3lb diced leg of pork, well trimmed
- Seasoned flour: flour, salt, pepper, mustard powder & brown sugar
- olive oil
- 1 pint apple juice
- 1/2 a pint of chicken stock
- 2 tablespoons of Lakeshore wholegrain mustard
- 1/2 a pint of cream
Method:
1. Preheat oven to 350F
2. Toss the pork in seasoned flour then brown it in the olive oil in batches.
3. Place in a flameproof casserole dish and cover with the apple juice and stock.
4. Add the mustard and bring to the boil, then transfer to preheated oven for 40 minutes.
5. Remove from the oven, stir in the cream and return to the oven for 10 minutes.
6. If the sauce is too thin, remove the meat and keep warm.
7. Put the casserole dish over a medium heat and simmer until the sauce reduces and thickens. Return the meat to the pan.
8. Serve over rice or mashed potatoes.
