Flahavan’s Apple and Blackberry Bircher
Ingredients:
100g Flahavan’s Irish Organic Porridge Oats
1 apple
½ tsp. cinnamon
½ banana
200ml almond milk
70g blackberries
100g natural yoghurt
30g mixed nuts
10g toasted pumpkin seeds
Honey (optional)
Method:
1. Remove the peel and core from the apple and discard. Add the apple, half a banana and almond milk to a blender and blend until smooth.
2. Pour into a bowl and mix with the Flahavan’s Irish Organic Porridge Oats, then cover and leave in the fridge for at least 2 hours, or preferably overnight.
3. Add the nuts and pumpkin seeds to a baking tray and toast in a hot oven for 6-8 minutes, or until the seeds start popping and the nuts are golden brown and toasted, then roughly chop.
4. Later (or the next morning) spoon the bircher into bowls, add a dollop of yogurt and sprinkle over the toasted nuts, seeds, cinnamon and blackberries.
5. Add a drizzle of honey to decorate, if using.
