Seasonal Vegetable Pasta

A pasta bake is a tasty trick for getting nutritious seasonal veg into family meals. You can vary the ingredients depending on what’s in season!

Seasonal Veg Pasta

Ingredients:

1 Packet of Knorr Farmhouse Vegetable Soup
1 medium butternut squash
2 sweet potatoes
2 carrots
1 red bell pepper
1 onion
250g fusilli pasta
100g grated firm cheese (eg parmesan)
1 clove of garlic
1 tblsp tomato puree
1 tsp chopped fresh herbs
1 chilli or tsp cayenne pepper (optional)

Method:

1. First prepare the butternut squash. Half it, remove the seeds and peel the skin.
2. Dice all the other vegetables to roughly bite size.
3. Using a frying pan, soften the finely diced onion and garlic in a drop of olive oil. Then add in the rest of the vegetables and fry together for approx. 5 minutes.
4. Add a tablespoon of tomato puree and a pinch of chilli or cayenne pepper (optional).
5. Mix your Knorr Farmhouse Vegetable Soup as per packet instructions, with 600ml of cold water and bring to the boil. Let it simmer with the lid on for approx. 10 minutes.
6. While the soup is boiling, cook the pasta.
7. Finally, mix the soup, vegetables and pasta together in a large serving dish and cook together for another 10 minutes. Finish it off with grated cheese and fresh herbs.
