Oatmeal Fish Pie

Ingredients

1.5 lbs fish mix (cod, salmon and smoked fish, skinned and cut into cubes)
2 sticks of celery
1 leek
1 carrot
2 cloves of garlic
thyme
12 fl oz fish or vegetable stock
1.5oz butter
2oz flour
3.5 fl oz cream or milk
2 fl oz white wine (optional)
salt and pepper

Topping

3oz butter
4oz breadcrumbs
4oz flahavans progress oatlets
zest of 1 lemon
2oz grated cheddar cheese
1 tbsp. fresh herbs
2oz flaked almonds

Method

1. Saute the diced vegetables in butter with garlic and thyme. Add the flour to coat the vegetables and dry up the juices.
2. add the fish stock and white wine (if using) and allow the vegetables to cook. Add the cream or milk.
3. When the vegetables are soft, add the fish. Cook very gently for 5-6 minutes.
4. Season with salt and pepper.
5. Transfer to a large casserole dish. Cover with the topping and nbake for approx. 30 minutes at Gas Mark 4.
6. For the topping, melt the butter, add the breadcrumbs, porridge oats, lemon zest, cheese, chopped herbs and flaked almonds.
