Flahavan’s Meatloaf

oatmeal-meatloaf

Method:

1 pound of good quality beef mince
1 clove garlic
1 large shallot
1 egg
½ cup Flahavan’s Irish Oatmeal
3 tbsp. ketchup
1 tsp Dijon mustard
1 tsp chopped parsley
1 tsp chopped thyme
Salt & Pepper

Ingredients:

1.Preheat oven to 340°F.
2.Finely dice the shallot and garlic.
3.In a large bowl, mix all ingredients by hand and form into a loaf shape.
4.Transfer to a loaf tin and bake in oven for approx. 55 minutes.
5.There are two ways to ensure the loaf is cooked through properly. You can pierce the loaf with a skewer and check the juices run clear or probe the loaf with a thermometer to make sure its above 165°F.

To Serve:
Serve hot with fresh garden vegetables.
