Cheese & Bacon Squares

 This quick and delicious tray bake is the perfect snack or lunch time recipe

Ingredients

5oz Rashers, sliced
4oz Sundried Cherry Tomatoes
5oz Parmesan Cheese
6oz Plain Flour
2 tsp Baking Powder
7 Eggs
65 ml Single Cream
7 tbsp Olive Oil
2 tbsp Fresh Rosemary chopped
1 tsp Crushed Chillies (optional)
2 cloves Garlic
Salt and Pepper

Method

1.Pre-heat oven to 170° C/340°F/Gas Mark 4 .
2.Brush the pan with oil and heat to medium heat. Fry the sliced bacon until crispy. Leave to cool and drain on kitchen paper.
3.Chop the sundried tomatoes in half.
4.Grate the Parmesan cheese.
5.Finely chop or crush peeled garlic.
6.Dry whisk flour and baking powder in a bowl to mix, then whisk in the eggs one by one, then the cream and finally the olive oil. Mix in the rashers, tomatoes, rosemary,
garlic and Parmasan. Season with salt, pepper and chilli, if using.
7.Pour into pan and bake for 15 mins, let cool in tin before slicing.
