Bacon Salad with Blue Cheese Dressing

This is a firm favourite, easy to do and great flavour.

Bacon & Cashel Blue Salad

8 slices of bacon, chopped
100g mixed leaves
4 tomatoes, chopped, or 8 baby plum tomatoes

3-4 tablesp. groundnut oil
1 tablesp. wine vinegar
1 tablesp. whole grain mustard
50g blue cheese, crumbled


1. Start with the dressing. Whiz the oil, vinegar, mustard and cheese in the processor. Taste for seasoning.
2. Cook the bacon in a pan until crisp. In a large bowl mix the leaves and tomatoes together.
3. Add the warm bacon and any juices in the pan.
4. Mix in the dressing and serve immediately.
