1. Slice eggs in half and remove yolks.
2. Place yolks in a small bowl and mash with a fork.
3. Stir in mayonnaise and mustard.
4. Stir in bacon and grated cheese.
5. Season to taste with salt and pepper.
6. Fill sliced egg whites with filling.
7. Garnish with chopped chives or paprika.
8. Refrigerate until serving.
