Ingredients
2lbs chopped mixed vegetables (celery, onion, carrot, parsnip, brocolli)
2oz Butter
3oz Flahavans Progress Oatlets
3 pints water
3 vegetable stock cubes
salt & pepper
chopped parsley
Method
1. Heat the water and stock cubes with the butter.
2. Add the oat flakes and allow to simme rfor 5 minutes.
3. Add the chopped vegetables and season to taste.
4. Cover and allow to simmer for 30-40 minutes. If using brocolli, add towards the end of cooking time and it retains its color.
5. Blend and serve garnished with cream and parsley.
