The addition of tangy rhubarb will perk up your morning. The oatmeal can be made with milk or water. Using water saves on calories and tastes just as delicious.

Ingredients

1 cup oatmeal
2 cups water
1 cup rhubarb, chopped into 0.5 inch pieces
1 teaspoon golden syrup
3 tablespoons brown sugar
Chopped pecans

Method

1. Combine the oatmeal and water in a saucepan and bring to the boil. Once it boils reduce the heat and allow to simmer for 10-12 minutes.
2. In a separate saucepan add the rhubarb and brown sugar. Place over a medium heat and allow the fruit to stew.
3. Remove the rhubarb from the heat once it is soft and the juices start to bubble.
4. Mix the stewed rhubarb through the oatmeal. Top with golden syrup ad chopped pecans.
