Slider Trio with Dubliner Cheese

Big flavors come in small bites. These mini burgers pack the tastes of juicy ground beef, hickory-smoked bacon, Kerrygold Dubliner Cheese made with grass-fed cow’s milk and rich, creamy Irish butter in every delicious mouthful. They’re the epitome of gastropub food right in your kitchen.

Slider Trio with Dubliner Cheese

Ingredients:

Sliders:
16 ounces ground beef
2 ounces bacon, cooked and crumbled
1/4 cup onions, minced and sautéed
1 tablespoon hickory salt
2 tablespoons fresh thyme
2 teaspoons freshly ground black pepper

Burger Sauce:
1 cup mayonnaise
1/2 cup ketchup
1/2 cup sweet pickle relish
2 tablespoons horseradish
2 teaspoons naturally brewed soy sauce
2 teaspoons seasoned rice vinegar

Toppings:
8 each decorative picks
8 each Kerrygold Dubliner Cheese, cut in 1/2-inch squares
8 ounces Kerrygold Dubliner Cheese, grated
Roasted red bell peppers, diced
8 slider buns
Kerrygold Unsalted Butter, softened, to taste
Fresh thyme leaves, to taste
8 slices tomato

Method:

Sliders:
1. In a large mixing bowl, combine the ingredients and mix together using your hands.
2. Form mixture into approximately 8 2-ounce balls.
3. Gently press with your hands just enough to flatten the tops and bottoms.
4. Sliders should resemble a meatball.

Burger Sauce:
1. In a large mixing bowl, combine ingredients and whisk together.
2. Taste and adjust with more horseradish for a spicier sauce or more pickle relish for a sweeter sauce.

Decorative Picks:
Skewer a Dubliner square onto each pick.

Toasting Buns and Grilling Sliders:
1. Preheat a stovetop or charcoal grill until very hot.
2. Spread cut-side of buns with Kerrygold Butter, toast the buns, cut side down for 15 to 60 seconds depending on the heat and desired color.
3. Once buns are toasted, set aside to a warm place and place the sliders on the grill.
4. Cook for 2 minutes, turn over and carefully top with roasted peppers and Kerrygold Dubliner Cheese.
5. Continue cooking another two minutes or just until cheese is lightly melted. Remove from grill.

Assemble:
1. Arrange slider bun bottoms on a large platter.
2. Place one tomato slice on each bun and top with a dollop of burger sauce.
3. Place grilled sliders on tomatoes, sprinkle with fresh thyme leaves and top with slider bun crowns.
4. Insert the decorative pick with the Dubliner Cheese square.

Makes 8 2-ounce sliders.
