Mustard & Lemon Crusted Pork Chops with diced Swede & Mash

Mustard & Lemon Pork

 
Chops with a tangy zing – sure to become a family favourite.

Ingredients

4 Basted Pork Chops
1 Lemon zested and juiced
6 Potatoes
1 Swede peeled and cubed
1 tbsp Lakeshore Mustard
100 ml Fresh Milk
1 tsp Dried Thyme
1 tbsp Olive Oil
3.5oz Irish Butter

Method

1.Firstly prepare your sauce by pouring the lemon juice and zest into a bowl.
2.Add the mustard and stir, season with salt and pepper.
3.Place the potatoes in a large saucepan and just cover with water.
4.Bring to the boil and cook for 20 minutes until the potatoes are softened.
5.Drain to remove excess water.
6.Mash the potatoes, pour in the milk, add in half the butter and season with some salt and pepper.
7.In a separate pan, add the swede to some boiling salted water.
8.Cook for 10-12 minutes until softened, then drain and coat with the remaining butter.
9.Season with some salt & pepper.
10.Meanwhile, drizzle the oil in a frying pan over a medium heat.
11.Add the chops and cook for 4–5 minutes on each side, pouring over the lemon and mustard sauce for the last minute or two.
12.Serve immediately.
