Leeks in ham and cheese sauce

Leek ham and cheese sauce

Ingredients:

115g/4oz Irish cheddar cheese (grated)
4 leeks
4 slices cooked ham
25g/1oz Irish butter
25g/1oz cream flour
300ml milk
2.5ml Dijon mustard
salt and ground pepper

Method:

1. Pre heat oven to 190c/375F
2. Trim the leeks to within 2.5cm in of the white
3. Put them into salt water and boil for 20 minutes
4. While they are cooking prepare the sauce
5. In a large saucepan, melt the butter and add the flour and cook for 1 minute, add the milk and stir until the sauce boils and thickens
6. Remove the sauce from the heat add the mustard and 3 quarters of the cheese
7. Season with salt and pepper
8. Put the leeks on a baking dish wrap them in ham and pour the sauce over the top
9. Sprinkle the rest of the cheese on top
10. Bake in the oven for about 20 minutes
