Irish Cheese Scones

Cheese Scones

Ingredients:

225g/8oz Odlums Self Raising Flour
Good Pinch Baking Powder
1 level Teaspoon Mustard
Salt & Cayenne Pepper
50g/2oz Butter (room temperature)
125g/4oz Grated Cheddar Cheese
1 large Egg beaten with
5 Tablespoons Milk
Grated Parmesan (optional)

Method:

1. Pre heat oven to 200°C/400°F/Gas 6. Lightly dust a baking tray with flour.
2. Sieve the flour, baking powder, mustard, salt and cayenne pepper into a bowl.
3. Rub in the butter.
4. Mix in the cheese. Add the beaten egg and milk, keeping back a tablespoonful to brush over the tops of the scones.
5. Mix to a soft dough.
6. Turn onto a lightly floured board and gently knead to remove ‘cracks’.
7. Put baking tray in oven to heat.
8. Roll out to a thickness of ½”/1cms. Using a 3″/8cms cutter, dipped in flour, cut into scones.
9. Place on tray, brush tops with egg & milk mixture, sprinkle over parmesan if liked.
10. Bake for 12 to 15 minutes until well risen and golden brown. Cool on a wire tray.
