pre heat oven to
190c/375F
trim the leeks to within 2.5cm in of the white
put them into salt water and boil for 20 minutes
while they are cooking prepare the sauce
in a large saucepan, melt the butter and add the flour and cook for 1
minute
add the milk and stir until the sauce boils and thickens
remove the sauce from the heat ad the mustard and 3 quarters of the cheese
season with salt and pepper
put the leeks on a baking dish wrap them in ham and pour the sauce over
the top
sprinkle the rest of the cheese on top
bake in the oven for about 20 minutes
