I used my favoriet pancake recipe and substitued this flour and they were fantastic.
I have also used it in the chocolat cake recipe on the hershey's cocoa box adding xanthum gum and got the lightest cake I've ever tasted.
Toll House cookies off the nestle's toll house recipe were also great. I just added the xanthum gum to it so it would hold it's shape.
Check out a gluten free recipe book (try Bette Hagman's)and it will tell you the approximate ratio of xanthum to flour for the different baking ie; cakes, cookies etc.
